I learned to make Cinnamon Rock Candy after my husband and I became married. they turned out wonderful.
Tip: I keep my hood vent on and face away as I add it or it can feel worse then onions as it is very strong. was good but not nearly cinnamony enough, I spent 2 days driving about to find the oil (was a treasure hunt) but the result was good. Also, be warned: when you stir in the food coloring and flavoring, it will splatter! Whisk in, working quickly. Word to the wise - if you're using cinnamon oil, have it under the fan and nowhere near your nose! If you buy your oil at a craft store as i did, you get 2 small bottles and they are each ONE DRAM. Simply amazing to me. My second batch I used cherry extract and it turned out well. Strawberry-Banana made with strawberry extract and banana cream candy oil. We make it every Christmas in memory of my husbands Grandmother. This definitely brings up memories - I love rock candy but never tried making it on my own. I love rock candy! We won't send you spam. We tried the candy plain, with just the sugars, corn syrup and water, and it was delicious. Allow to cool for 4 hours.

Mix over medium high heat until sugar starts to dissolve. we made this with older family members , three batches three flavors, if you assign everyone a step it goes quickly, assign someone to clean the pan quickly to save a huge mess later. After 4 hours dust the top of candy with powdered sugar.
The kids danced a little "jig" around the kitchen, fanning their tongues, when they took their first bite, but quickly asked for more.

Wax paper isn't heat resistant so the hot candy probably broke down the wax paper. I wish I would have used adeeper pan, I almost had a close call as it started to boil. I had a very hard time finding cinnamon oil and eventually found it at my local pharmacy.
I had to quickly remove it from the heat and whisk until it had subsided enough to not boil over. Nutrient information is not available for all ingredients. Like I said, the flavor was perfect and I halved the recipe. I then returned it to medium high heat.

If you haven't made cinnamon candy before, this is your warning.cinnamon oil is POTENT stuff. I never see it in stores so I am glad that I have the recipe in my hands now! The cinnamon oil was so strong that it was painful for me when the vapors hit me in the face.
